The World Famous Hudson’s Seafood House on the Docks

All tables feature extraordinary views of Port Royal Sound for a truly unique Lowcountry dining experience. Hudson's employs the largest and one of only two remaining fishing fleets on the island which brings fresh local seafood straight from our docks to your table. Share the excitement as our crews unload thousands of oysters, shrimp and soft shell crabs from the day's catch. Bring your family and friends for a special Lowcountry treat that has been a tradition for island-goers for many years.

Hudson's is dedicated to giving customers fresh, local fish. We work with fisherman in Charleston, Georgia and northern Florida to get fresh catches such as swordfish, mahi mahi, grouper, tile fish, trigger fish, vermilion snapper, and black sea bass. All of our fish is processed in-house and added to the daily lunch and dinner specials.

In the Spring we have a soft shell crab shedding operation at the restaurant. Shedding boxes are constructed in the packinghouse with a water circulating system to facilitate and manage the molting process. Once the crabs back out of their shells, they are immediately removed and served at the restaurant. Last year we shed out over 2,300 crabs.

Island Tradition Since 1967

Hudson’s has been a family affair since the venerable J.B. Hudson, Sr. put his name on the door of the old Hudson’s Oyster Factory back in the 1920’s when it was a seafood processing plant. For more than 46 years, Hudson’s has been a tradition for islanders and visitors as Hilton Head’s most renowned seafood eatery. Almost all our seafood comes from these waters. We are committed to buying local seafood from local fisherman, and serving it to our customers at its freshest. Our guests enjoy 3,000 gallons of oysters and 70,000 pounds of shrimp annually, as well as 250,000 raw oysters. Our family of servers, chefs, hostesses, managers and everyone at Hudson’s wants to welcome your family to have a great local experience and a great meal!

Andrew Carmines, General Manager at Hudson’s, started Shell Ring Oyster Company in 2013. Shell Ring Oyster Company is an oyster farm that provides the finest, local single select oysters and another way for Hudson’s to give customers the absolute freshest product available.

Equally important to Carmines is environmental impact. He believes if you are making a living from what the ocean provides, you should be responsible about the resources you are depleting. “Shell Ring will allow us to avoid purchasing large amounts of the natural resource and will clean the water in the process,” Carmines said.
